Ingredients
175g/6oz plain flour
1.5ml/ ¼ teaspoon bicarbonate of soda
Pinch of salt
5ml/1 teaspoon ground ginger
5ml/1 teaspoon ground cinnamon
65g/2 ½oz softened unsalted butter
75g/3oz caster sugar
30ml/2 tablespoons golden syrup
1 egg yolk, beaten
Method
1. Sift together the flour, bicarbonate of soda, salt and spices. Rub the butter into the flour in a large bowl, until the mixture resembles fine breadcrumbs.
2. Add sugar, syrup and egg yolk and mix to a firm dough. Knead lightly. Wrap and chill for 30 minutes before rolling to required shape.
3. Bake at 180C/350F/Gas 4 for about 12 minutes.
